So I'm going to try and start posting recipes I LOVE instead of recipes that are so-so and I'm just proud I made instead of store bought:) SOOO this one is SOOO good! I had great reviews, too.
PEANUT BUTTER WHOOPIE PIES
Story behind the Whoopie Pie-In the 50's, women used to bake their leftover cake batter and throw some icing in the middle of the cookie. They would stick them in their husbands lunch boxes and the husband would open up their box and yell "whoopie!" – cute, huh?
2 packages Devils Food cake mix
1 1/4 cups Crisco
*makes 24 complete whoopie pies*
Preheat oven to 375 degrees. Combine all ingredients and make little spoonfuls to put on a greased cookie pan. It took me a few tries to get them perfect. I would make balls an inch apart from each other then go back and smash flat just slightly with spatula. Bake for 8-10 minutes flipping pan halfway through. Let cool.
PEANUT BUTTER FROSTING
2/3 cup creamy peanut butter
1 stick softened unsalted butter
3/4 cup powdered sugar
pinch o' salt
Cream together peanut butter and butter high till creamy. On low, add in sugar then beat high until fluffy. Add salt at the very end for taste. I mixed in a few mini chocolate chips which were good!
Put a large dollop of icing between each cookie. The filling will still be creamy but will set after its been put together so don't worry about adding too much- I could have used a little more because the icing is ADDICTIVE!! PS- boys love these.
Happy Baking and Enjoy!
Mom and I went on a home decor shopping date today and found the missing pieces to my new little room I'm creating! I love it so much- it makes me happy. I'm going to take pictures tomorrow and share it with you!!
We went to Anthropologie and all of the fresh spring clothes are out! Cute dresses and pretty color tops- it makes me wish it was May and I had a tan. Look how cute these little jewelry hangers are:
I guess they just knew I was coming— haha, or I put them there. And then left it that way! Muahahaha
When mom and I were finished scaling Myrtle Beach, I went to Lowe's because I have a new picture to hang. Confession- I don't own a hammer. I ask people to borrow their hammer so they will come and hammer what I need done. It happens a few times a year, too, I don't know how I keep fooling them!! HA
Well, I decided today is the day to grow up and take on the task myself. I marched into Lowes and this sweet young guy asked if I needed help (I must have looked confused to start with). I said "Yes, I want to buy a hammer". Just like that. It's almost as bad as "I carried a watermelon". Almost. Well he said ok and then I followed it up with an even more educated statement- "and I'd like to buy one nail." Yeah, so much for pretending I'm a regular handy girl. The guy kind of laughed and helped me the best he could. I didn't say anything the whole rest of the time but nod because he seemed pretty entertained by my question to start with- but then again, he asked to help me. His fault. Poor guy helped me for about 5 minutes trying to find just one nail but it wasn't happening. Short of him feeling sorry for me and just plucking one from a box for me, he gave me the cheapest box and a cheap hammer since I'm "a beginner"- his words not mine. Here is my Lowe's purchase in all it's glory.
Impressive, I know. Happy Sunday!
All you need:
shapes to fill glass- I got trees and snowmen from Walmart
glitter or sparkly snow they use in setting up Christmas villages
that mason jar you have in the back of your fridge with old pickles in it
hot glue/glue gun
1- Take the jar apart and hot glue your figures directly on the sealing part of the jar
2. Set out all pieces and fill your mason jar with the glitter/snow
3. Twist on top and shake it up! (beautiful video here) ha
Easy! I made about 6 for my fireplace and passed some out to friends! Cute idea and fun home decor.
